Your journey into cooking began at age seven, inspired by watching your mum cook and bake. Could you share the last meal you prepared together?
Chef Roux: Surprisingly, I didn’t initially enjoy cooking as a child due to the constant activity in our bustling household. However, over time, it became a cherished bond between my mother and me. Now, I find immense joy in it, even making it my profession. The last meal we prepared together was Nsala soup (white soup). My mother always emphasized its lightness and healthiness due to its lack of oil, which greatly influenced my love for fruits and vegetables, particularly carrots and cucumbers.
As a chef, what are your essential ingredients for crafting a nutritious meal?
Chef Roux: In the symphony of flavors in my kitchen, I love experimenting with fresh greens, nuts, grains, lean proteins, and a vibrant array of fruits and vegetables reminiscent of a rainbow. For me, a healthy meal isn’t just about nourishment; it’s about creating a delightful fusion of flavors and textures, challenging the notion that healthy food is bland. My favorites include kale, cabbage, carrots, beetroots, seafood, avocado, potatoes, quinoa, fonio, chia seeds, mushrooms, cucumbers, and watermelons for their hydrating properties.
As a Knorr Eativist, could you share a standout recipe that embodies the values of ‘Eat for Good’?
Chef Roux: It’s difficult to choose just one standout recipe! However, two come to mind: my kale sauce, rich in vitamins and budget-friendly, is a delicious example of ‘Eat for Good.’ It proves that nutritious meals can be both affordable and flavorful. Additionally, my Jollof quinoa twist, substituting protein-rich quinoa for rice, demonstrates how we can indulge in our staple dishes mindfully and guilt-free.
